Pear Salsa

2 tablespoons vegetable oil
1 medium onion — chopped
1 green pepper — chopped fine
1 lg garlic clove — chopped fine
2 tablespoons finely chopped parsley
1 tablespoon lemon juice
1/2 teaspoon salt
1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano
1 tablespoon chopped fresh basil or 1 teaspoon dried basil
1/2 teaspoon Tabasco sauce
2 medium tomatoes — seeded and chopped coarse
2 to 3 pears — peeled & chopped

Heat oil in medium fry-pan. Saute onion until tender, about 3 to 4 minutes. Add green pepper, garlic, parsley, lemon juice, salt, oregano, basil and Tabasco sauce; cook 2 minutes.

Remove fry-pan from heat and stir in tomatoes and pears.

Cover and refrigerate.

Make 5 cups.
