2 large russet potatoes, washed and cut into 1-inch cubes
Drizzle olive oil
1 teaspoon kosher salt
1 tablespoon paprika
2 tablespoons mayonnaise
Preheat oven to 400 degrees.
Toss the potatoes with olive oil and salt. Roast until cooked through and golden brown on all sides, tossing halfway through cooking, about 20 minutes.
Meanwhile, stir together paprika and mayonnaise. When potatoes are ready, toss them with dressing.
Potatoes should be very lightly coated.
