Pasta with Mushrooms and Olives

8 cups water
3 tablespoons olive oil
2 tablespoons coarse salt
1 (16 ounce) package fusilli pasta
1/2 pound fresh mushrooms, coarsely chopped
1 clove garlic, chopped
1/3 cup white wine
1/2 cup pitted black olives, finely chopped
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/3 cup butter
1/4 cup Parmesan cheese, grated

Bring water, 1 tablespoon olive oil and coarse salt to a boil over high heat. When water comes to a boil, add pasta, reduce heat and cook for 8 minutes until pasta is al dente.

Drain. While pasta is cooking, prepare the sauce. Heat a heavy skillet over medium heat. Add mushrooms, garlic and 2 tablespoons olive oil and cook for 5 minutes while stirring. Add wine and cook for 5 minutes. Add olives, salt and pepper, mix well and cook for 3 minutes. Add butter and cook while stirring until butter melts.

Transfer pasta to a large serving dish and pour sauce over top. Add half the Parmesan cheese and mix well.

Transfer to individual dishes and sprinkle each portion with remaining cheese.

Serve immediately.
