Orange Salsa

2 large oranges — peeled and diced
1 large tomato — seeded and diced
1/3 cup red onion — minced
1 teaspoon orange peel — grated
1 teaspoon garlic — minced
1 teaspoon ginger root — minced
1/2 jalapeno — minced fine
1/4 teaspoon salt
1 tablespoon cilantro — fresh

In a bowl combine all ingredients except the cilantro and chill, covered, until ready to serve.

Before serving, stir in the cilantro.
