Moist Banana Bread

2 cups sifted flour
1 teaspoon baking soda
3/4 teaspoon salt
3/4 cup butter, room temperature
1 1/2 cups sugar
2 eggs
1 cup mashed bananas
1 teaspoon vanilla
1/2 cup buttermilk
3/4 cup chopped nuts (walnuts or pecans)

Preheat oven to 325 degrees F. Grease a 9x5x3-inch loaf pan and line bottom with waxed paper.

Sift together flour, baking soda and salt.

Cream together butter and sugar in a mixing bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in bananas and vanilla. Add dry ingredients alternately with buttermilk to creamed mixture, beating well after each addition. Stir in chopped nuts.

Pour batter into prepared pan and bake for 1 hour 15 minutes or until bread tests done.

Cool in pan on wire rack for 10 minutes. Remove from pan and cool completely. Wrap loaf in aluminum foil and let stand 24 hours for easier slicing.
