Meatball Soup

Also known as Albondigas

1 pound ground beef
3 tablespoons onion — diced
1/4 teaspoon oregano
Salt and pepper
1 bay leaf
6 cups water
4 stewed tomatoes — up to 5, chopped
1/2 cup Minute rice
1 cup cooked potatoes — tender-firm, sliced

Blend the onion into the ground beef then add the oregano, salt and pepper. Form 18 meatballs.

Add water, tomatoes and bay leaf to a 2-quart saucepan. Add meatballs and cook over medium heat, covered.

When meatballs are fully stewed, remove bay leaf, add rice and sliced potatoes. Simmer over low heat covered until potatoes are tender.

Serves 6.
