Louisiana Light Creole Sauce

1/2 cup canned tomatoes, drained and coarsely chopped
1 stalk celery, chopped
2 tablespoons green bell pepper, chopped
2 tablespoons chopped onion
1 garlic clove, minced
2 dashes cayenne pepper
1 dash pepper
1 teaspoon extra-virgin olive oil

Combine all ingredients in a small bowl. Pour over chicken or seafood and bake, or heat and serve on the side.
