Lentil & Ham Stew

3 cups diced ham
2 cups dried lentils
2 cups each diced carrots and celery
1 cup chopped onion
1 tablespoon minced garlic
4 cups water
1 teaspoon dried oregano
2 cans (10 1/2 oz each) condensed chicken broth
1/4 teaspoon each salt and pepper
6 oz bag baby spinach leaves
2 tablespoons lemon juice
Lemon Slices

Mix all ingredients except spinach and lemon juice in a slow cooker. Cover and cook on high 5 hours or on low 9 hours or until lentils are tender.

Stir in spinach, cover and cook 5 minutes or until tender. Stir in lemon juice.

Garnish with lemon slices and serve.

Makes 6 servings.
