1 pastry shell
1 cup cheddar cheese
1 1/2 cups Monterey Jack cheese
1 cup milk
1 can chopped green chilies (4 oz)
Salt and cumin
3 eggs, lightly beaten
Bake pastry shell in a microwave pie plate according to directions.
Grate cheeses and sprinkle in bottom of shell.
Heat milk, chilies, salt and cumin but do not boil. Whisk eggs into hot mixture. Pour mixture over cheese.
Microwave at 70% power for 10 to 12 minutes, turning every 3 to 4 minutes.
Pie will be soft in center but will set up during standing time. let stand at least 30 minutes.
