Jambalaya (3)

4 tablespoons margarine
1 cup onion, chopped
1 cup celery, chopped
1 cup green bell pepper, chopped
1/4 cup red bell pepper, chopped
1 cup green onion, chopped
2 garlic cloves, minced
2 cups chicken broth
1 can (8 oz) tomato sauce
1 teaspoon black pepper
1 teaspoon thyme
1 teaspoon poultry seasoning
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon cayenne pepper
2 bay leaves
1 lb sliced sausage, cooked **
2 cups medium grain white rice

In a large saucepan, over medium heat melt margarine, sauté onions, celery, bell peppers, green onions, and garlic until tender-crisp. Add chicken broth, tomato sauce, and add all seasonings. Bring mixture to a boil. Add rice. Cover, reduce heat and simmer for 20 minutes.

Fold in cooked sausage. Remove bay leaves, serve.

** Prepared duck, ham or seafood may be substituted for sausage.
