Egg Salad Sandwiches

1 garlic clove, minced
1 tablespoon honey Dijon mustard
1/8 cup finely chopped celery
2 teaspoons pesto
1/8 cup finely chopped onion
1/4 cup mayonnaise
2 slices tomato
2 leaves lettuce
1/4 teaspoon salt
4 hard cooked eggs, chopped
4 slices bread, toasted
1/8 teaspoon pepper

Combine mayonnaise, celery, onion, mustard, pesto, garlic, salt and pepper in a bowl, stir in eggs.

Spread over 2 toast slices, top with lettuce, tomato and remaining toast.

Serves 2.
