1 3/4 cups of flour
1 cup sugar
1 teaspoon baking soda
1 large egg slightly beaten
2 tablespoons butter or canola margarine
1 cup dates chopped
1 cup boiling water
1/2 teaspoon salt
1 teaspoon vanilla
* optional 1 cup chopped nuts (walnuts or pecans)
Place dates and butter in large bowl with the one cup of boiling water, stir and let sit until cooled one hour.
Heat oven to 350° and grease a 9 X 5 loaf pan.
To the date mixture add beaten egg, vanilla and sugar.
Mix the flour, baking soda and salt together in separate bowl.
Add dry ingredients to the batter and stir until moistened.
* Add nuts if using nuts and mix well.
Pour batter into prepared pan. Bake in oven for 50-60 minutes or until toothpick inserted comes out clean.
Cool 10 minutes on wire rack. Remove from pan and continue cooling on wire rack.
