2 teaspoons butter
2/3 cup prepared fresh salsa
1/2 teaspoon curry powder — to 1 teaspoon, depending on taste
8 cups packed spinach leaves — washed and drained
1/8 teaspoon salt — to 1/4 teaspoon or to taste
2 tablespoons plain yogurt
Sauté salsa with curry powder in butter for 3 minutes. Add the spinach and salt. Cover and steam for 3 to 5 minutes or until spinach is wilted and cooked to desired consistency.
Garnish each serving with a tablespoon of yogurt.
