Crunchy Cornmeal Chicken

1 broiler-fryer, cut up
1/4 cup cornmeal
1/4 cup whole wheat flour
1/4 teaspoon each oregano and marjoram
1/2 teaspoon garlic powder
freshly ground pepper
1 egg white, slightly beaten

Remove skin and fat from chicken. Rinse and pat dry with paper towels.

Combine cornmeal, flour and seasonings. Dip each piece of chicken in egg white, then in cornmeal mixture.

Place chicken on a rack in a shallow pan. Bake uncovered in preheated 350º F. oven for 1 hour or until chicken is tender. Turn once so chicken browns evenly.

Makes 4 servings.
