1/4 cup biscuit/baking mix
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup crushed Caesar salad croutons
1 egg; beaten
3/4 pound boneless skinless chicken breasts; cut into 1″ strips
1 tablespoon butter; melted
Combine biscuit/baking mix, salt and pepper in a bowl.
Place croutons and egg in separate bowls.
Dip chicken breasts in baking mix, egg, and then croutons.
Place on a greased baking sheet, drizzle with melted butter.
Bake at 450° for 12 minutes or until chicken is no longer pink.
