Chinese Fried Rice (2)

3 tablespoons cooking oil
2 beaten eggs
1/2 to 1 cup diced chicken, ham or pork
1/4 cup thin sliced onions
4 cups of cooked rice
3 tablespoons soy sauce

In a 10 inch skillet heat 1 tablespoon of oil, add cooked meat and onions in hot oil.

When that is about done move to one side and add egg to other side of pan. Then when done mix all together.

Stir in cooked rice. Sprinkle with 3 tablespoons soy sauce. Heat through, tossing gently to coat with soy.
