5 cans chicken broth
1 cup finely chopped onion
1 cup finely chopped celery
2 cups plain frozen sliced okra (not breaded)
29 oz can whole tomatoes
1 cup raw rice
2 cups rotisserie chicken-1″ pieces
salt & pepper to taste
Hot sauce optional
Put broth in stockpot and add next 6 ingredients to pot. Bring to a boil, reduce heat low. Cover and simmer until veggies are soft, about 20 minutes. Stir occasionally.
Add rice and stir cooking until rice is done, about 20 minutes.
Add chicken and gently stir. Simmer 10 minutes.
