Chicken di Napolitano

1 tablespoon olive oil
2 boneless skinless chicken breasts, about 8 oz
1 can diced tomatoes, undrained (14.5 oz)
1 1/4 cups water
1 box. Uncle Bens Country Inn Rice Pilaf
1/4 cup chopped fresh basil or 1 1/2 teaspoons dried basil

Heat oil in large skillet. Add chicken; cook over medium high heat 8 to 10 minutes or until lightly browned on both sides. Add tomatoes, water, rice and contents of seasoning packet. Bring to a boil. Cover; reduce heat and simmer 15 to 18 minutes or until chicken is no longer pink in center and liquid is absorbed. Stir in basil.

Slice chicken and serve over rice.

Makes 2 servings.
