1 large green bell pepper, chopped
1 clove of garlic, peeled and minced
3 large tomatoes, peeled and chopped
1 pound boneless and skinless chicken breast, cut into bite size pieces
2 tablespoons olive oil
1/4 cup basil, chopped
1 cup peas
hot cooked long grain rice
Heat oil in large non-stick skillet. Saute pepper and garlic for about 5 minutes until just soft. Do not brown. Add chopped tomatoes, chicken, basil and peas. Stir together. Simmer on low-medium heat for about 20 minutes, stirring occasionally.
Serve over rice.
