Cheesy Garlic Bread

3/4 stick butter, softened
2 cloves garlic, crushed
1 tablespoon finely chopped parsley
2 tablespoons cheddar cheese, finely grated
2 tablespoons Gruyere (or Swiss) cheese finely grated
2 tablespoons Parmesan cheese, grated
French bread

Preheat oven to 400°.

Mix together butter, garlic, parsley and cheeses.

Slice loaf in half lengthwise and spread each cut side with butter mixture, then sandwich it back together.

Alternatively, slice in 1/2 inch slices,so the loaf stays whole, cutting through but not to the bottom of loaf.

Wrap loaf in foil and bake for 20 minutes.

If serving straight away, unwrap it and bake for a further two or three minutes to crisp it up.

If taking on a picnic, rewrap the loaf in second layer of foil and tea towels to keep it warm for up to one hour.
