6 catfish fillets — fresh or frozen
1 cup cheese crackers — finely crushed
1/4 cup sesame seed
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/4 cup butter or margarine — melted
Grated Parmesan cheese — (optional)
Thaw fish fillets if frozen. Preheat oven to 400 F.
In a shallow bowl, combine cracker crumbs, sesame seed, parsley, salt, and black and cayenne peppers. Dip fish fillets in melted butter, then roll fillets in cracker-crumb mixture. Place fillets in a single layer in a baking dish that has been coated with nonstick vegetable spray and bake for 15 to 20 minutes, until golden.
Serve topped with Parmesan cheese, if desired.
