Cheesy Fish Fillets with Spinach

2 tablespoons lite butter
2 tablespoons flour
1 teaspoon chicken bouillon
Dash nutmeg
Dash red pepper
Dash white pepper
1 cup fat free evaporated milk
2/3 cup lite shredded cheddar
1 pkg frozen chopped spinach thawed and well drained
1 tablespoon lemon juice
1 1/2 lb fish (preferably cod)
1/2 teaspoon salt
Parmesan cheese (optional)
Paprika (optional)

In sauce pan melt butter and then add next 5 ingredients and blend together. Add milk while on medium heat and constantly stir until mixture thickens.

Put spinach in bottom of 7 1/2×12 baking dish and sprinkle with lemon. Put fish fillets on top and cover everything with cheese sauce. Bake at 350 for 20-25 minutes or until fish begins to flake.

As an option you can add Parmesan and paprika and bake another 2 minutes.

Serves 4.
