10 cups popped popcorn
1 cup mini pretzels
1 cup salted cashews
1 stick unsalted butter, cut into pieces
1 cup light brown sugar
1/4 cup light corn syrup
1/2 teaspoon baking soda
Heat oven to 200°. Coat a baking sheet with cooking spray.
Place popcorn, pretzels and cashews in a brown paper bag, shake to combine, set aside.
Microwave butter in a microwave bowl until melted 1 minute. Stir in brown sugar and corn syrup, microwave until mixture begins to boil 2 minutes stir then microwave 2 more minutes. Add baking soda to sugar mixture, stir until it begins to foam, pour over popcorn mixture in bag. Fold over top of bag, shake to coat popcorn.
Microwave in bag 1 1/2 more minutes.
Pour popcorn mixture onto baking sheet, bake 1 hour, stirring every 15 min. Let cool completely before serving.
Makes 12 cups.
