Cajun Back Ribs

4 lb pork back ribs
3 tablespoons paprika
1/2 teaspoon cayenne pepper
1 tablespoon garlic powder
2 teaspoons oregano
2 teaspoons thyme
1/2 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon cumin
1/4 teaspoon nutmeg

Combine all seasoning and mix well. Dust all surfaces of ribs with marinade sauce.

Prepare medium hot coals and place in covered grill.

Grill ribs over indirect heat for 1-1/2 hours. Turn every 15 minutes until done.

Yield: 4 Servings
