3 large pink grapefruit
1/2 cup reduced sugar apricot preserves
1 tablespoon brown sugar
1/4 cup sweetened flaked coconut
Peel, section and seed grapefruit and place in 4 broiler proof dessert dishes on a large baking sheet.
Combine preserves and sugar, stirring well; spoon over grapefruit.
Broil 2 to 3 minutes or until bubbly. Sprinkle mixture with coconut and broil 1 additional minute or until coconut is lightly browned.
