Blue Cheese Crisps

2 (4 oz) pkgs crumbled blue cheese
1/2 cup (1 stick) butter, softened
1 1/3 cups flour
1/3 cup poppy seeds
1/4 teaspoon ground red pepper

Beat blue cheese and butter at medium speed until fluffy. Add flour, poppy seeds and red pepper and beat until they blend. Divide dough in half, shape each portion into a 9-inch log. Cover and refrigerate for 2 hours.

Cut each long into 1/4-inch slices and place on ungreased baking sheet. Bake at 350° for 13 to 15 minutes or until golden brown. Cool.
