2 tablespoons olive oil
1 green bell pepper, cut into 1-inch strips
2 garlic cloves, minced
15 1/2 oz black-eyed peas canned, rinsed and drained
1/2 teaspoon crushed red pepper flakes
Add oil to a large nonstick skillet over medium-high heat. Add green pepper and saute for approximately 10 minutes. Add garlic and saute 30 seconds. Add black-eyed peas and red pepper flakes and saute 5-10 more minutes.
