Also known as Fried Plantains
1/2 cup vegetable oil
2 lg. green bananas, peeled and cut crosswise into 1/2 inch slices (plantains are best, but green bananas can be substituted)
Heat the oil in a heavy skillet over moderate heat.
Add as many slices as you can without crowding the pan. Brown 2 minutes on each side. Drain on paper towels.
On cutting board, flatten each slice with a spatula to 1/4 inch thick and 2 inches in diameter. Heat oil again and fry about 1 minute on each side. Remove, salt, and serve warm with hot sauce if desired.
Yield: About 30 slices
