1 banana (6 ounce) thickly sliced
1/4 cup skim milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 egg white
4 slices whole wheat bread
Preheat oven to 350°.
Place all ingredients except bread in blender and puree. Pour mixture in shallow bowl.
Dip both sides of each slice of bread in the mixture, and place bread on a non-stick baking sheet or regular baking sheet coated with a non-stick cooking spray. Bake 15 minutes.
