Banana Crunch Loaves

2 cups flour
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
2 eggs
3/4 cup light brown sugar
1/2 cup unsalted butter, melted
2 bananas, mashed
1 teaspoon vanilla
1/2 cup chopped walnuts
3/4 cup low fat granola (without raisins), lightly crushed

Heat oven to 350°.

Coat 3 loaf pans with cooking spray. In a bowl, whisk together flour, baking powder, cinnamon and salt. Make a well in the center of the dry ingredients, set aside.

In a medium bowl, combine egg, brown sugar and butter. Whisk until smooth. Add mashed banana and vanilla.

Pour banana mixture into well of dry ingredients. Stir until moist. Stir in walnuts. Divide batter among the pans. Sprinkle granola over all pans.

Bake 33 min. or until set and golden around the edges. Let the loaves cool in the pans 5 minutes. Transfer to rack, serve warm.

NOTE— This batter may also be prepared as 12 standard muffins. Reduce baking time to 25 minutes

Makes 3 Loaves, 6 Slices Per Loaf Or 12 Muffins.
