3/4 cup plain nonfat yogurt
1/4 cup reduced-fat sour cream
1 cup unsweetened grape juice
1/4 cup reduced-calorie maple-flavored syrup
1 cup stone-ground or degerminated cornmeal
1 cup all-purpose flour
1 cup rye flour
2 teaspoons grated orange peel
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 tablespoon frozen (thawed) apple juice concentrate
Heat oven to 350°. Spray loaf pan, 9 x 5 x 3 or 8 1/2 x 4 1/2 x 2 1/2 inches, with nonstick cooking spray.
Mix yogurt, sour cream, grape juice and maple syrup in large bowl. Stir in remaining ingredients except apple juice concentrate. Spread in pan.
Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Remove from pan. Brush with apple juice concentrate. Cool completely on wire rack before slicing.
