Bagel Scramble Sandwiches

2 whole wheat bagels – cut in half
4 slices Cacique® Queso Quesadilla Jalapeno – (slice thinly)
1 1/2 cups liquid egg substitute
1/4 teaspoon salt
1 pinch cracked black pepper
1/4 cup green onions – sliced
1/4 cup red or green salsa
1 avocado – diced for garnish

Lightly toast bagel halves. Place Cacique® Queso Quesadilla Jalapeno slices on top of bagels. Melt cheese in a toaster oven or warm oven. Whisk liquid eggs until frothy. Stir in salt and a pinch of pepper.

In a small non-stick skillet sprayed with cooking spray, cook green onions until softened, about 1 minute on medium heat. Add egg mixture to pan. Cook eggs, stirring with a heat-proof rubber or wooden spatula until the eggs form soft curds. Divide eggs into four portions and place on top of cheese-topped bagel halves.

Top each bagel scramble with 1 tablespoon of salsa and garnish with diced avocado. Serve.
