Almond Coconut Oatmeal Cookies

1 1/4 cup rolled oats
1/2 whole wheat flour
1/2 teaspoon salt
1/2 cup dried coconut shreds
1/3 cup raisins
2 tablespoons corn oil
3/4 cup mashed, peeled apple
1/4 cup margarine
1/2 teaspoon vanilla
1/3 cup toasted ground almonds
4 tablespoons maple syrup

Mix dry ingredients and set aside.

Then blend apple and maple syrup till it forms a nice smooth mass. Add butter. Add liquid to dry mixture and mix to form a homogeneous whole.

Scoop spoonfuls onto lightly greased baking sheet or nonstick flat pans and flatten to a 1/4 thickness.

Bake in a preheated oven at 400° for 15 to 20 minutes. Cool on rack.

Serves 12 to 20.
